Dutch Oven Calzones (makes 6 individual calzones)
Before the trip begins, Pre-chop 1 cup of the following ingredients; Onions, bellpepper, mushrooms, favorite cheese and zuccini and place into baggies/containers. (This will save you a big chopping mess once you are out in the field.) 1- 80z jar of pizza sauce, 1 batch of you favorite pizza dough or buy two pre-made pizza dough bags. Heat bottom of dutch oven with 1o charcoal briquettes, while heating create three individual size calzones with the pre-chopped ingredients listed above. (My favorite combination; onions, zuccini, mushrooms, bell peppers and some cheese with pizza sauce.) Make sure after you close your calzone to slices a few holes on top for the steam to be released. Add a couple tablespoons of veggie oil to bottom of oven, Place three calzones at a time, top with lid and 10 charcoal briquettes and bake for 30 minutes. Calzones will be done with the bottoms are golden brown and the dough is not squishy.
10″ Dutch Oven Cherry Cobbler
Heat Dutch Oven over 8 Charcoal Briquettes, Add 3 tablespoons of vegetable oil, Dump 2 16oz jars of Cherry Pie Filling into the bottom. In the mean time, have a camp buddy mix up the yellow cake mix into a ziplock baggy with the necessary ingredients from the back of the box. Once combined, spread the cake mix on top of the simmering cherry pie filling and bake with another 10 charcoal briquettes on the lid for 25-30 minutes. Cobbler will be done when the cake is golden brown and a toothpick comes out clean from the center.
10″ Dutch Oven Tamale Casserole
1 lb. ground beef, 1 ear of fresh corn kernels, 1-8oz. can of enchilada sauce, 1 chopped medium onion, 1 corn bread mix, bring appropriate ingredients for the corn bread, 3 tablespoons of oil. Start 12-16 charcoal briquettes on the campfire. When the charcoal briquettes turn white, place 6-8 under the dutchoven. Place oil in the dutchoven, add onions and ground beef. Saute and brown the meat. Add the enchilada sauce, bring to a boil. Meanwhile mix corn bread mixture and appropriate ingredients; (milk, oil, egg if it calls for it) within a ziplock bag. Massage until throughly combined. Pour cornbread mixture over the meat mixture and cover with dutchoven lid. Place 6-8 briquettes on top of the lid and cook for 20-30minutes. The tamale casserole will be done when you insert a toothpick into the cornbread and it comes out clean. Enjoy!
10″ Dutch Oven Peach Cobbler
2 tbl. oil, 1 large can of peaches, 1 boxed cake mix, appropriate ingredients for cake mix (eggs, milk, oil), 12-16 charcoal briquettes. Start the charcoal briquettes on the campfire, when briquettes turn white, place 6-8 under the dutchoven. Pour oil in bottom of dutchoven then pour the canned peaches. Meanwhile in a ziplock bag throughly combine cake mix and appropiate ingredients. Pour the cake mix over the canned peaches in the dutchoven, cover with the lid and place 6-8 briquettes on top of the lid. Cook for 20-30 minutes. Cobbler will be done with you place a toothpick in the cake and it comes out clean. Enjoy!
Homey Packs
2 large pieces of foil, 1 cup diced raw potatoes, 1/4 cup raw diced celery, 1/4 cup diced raw carrots, 1/2 cup diced cooked Italian sausage, 2 tbls. oil, pinch of salt and pepper. Place raw vegetables, cooked sausage in the middle of one piece of foil. Dizzle oil all over mound and sprinkle with salt and pepper. place second piece of foil over top of the mound and start rolling in all four sides, to create a tight foil pack. Write your name on top of the pack if you are with multiple people. Create a nice bed of hot coals in the campfire place homey packs over the fire and cook for about 15-20minutes. Enjoy.
10″ Dutch Oven Chocolate Brownies
1 boxed Chocolate Brownie Mix, bring appropriate ingredients for the brownies (Oil & Eggs), 2 tbls. oil. Start 12-16 charcoal briquettes on the campfire. When the charcoal briquettes turn white, place 6-8 under the dutchoven. Meanwhile in a ziplock bag mix brownies according to instructions on back of box. Place oil in the dutchoven, pour brownie mix into dutch oven, cover with lid and add 6-8 briquettes to the top. Cook for 20-30 minutes until middle is set to your taste. Top with fresh raspberries, blueberries and crushed cashews. Enjoy!
Campfire Blueberry Muffins within an Orange
5 med. size piece of foil, 5 large oranges, 1 small box of blueberry muffin mix (we used Jiffy), appropriate ingredients (Eggs, Oil & Milk). Cut oranges in half, scoop out inside of oranges. On one of the halves cut a small hole in the top to let the steam out. Meanwhile mix the blueberry muffin mix in a ziplock bag according to directions on back of box. Fill one half of the orange with mixture and place the other half with the hole on top. Carefully wrap the orange in the foil with the hole towards the top. Repeat with remaining oranges, place on hot bed of coal in the campfire and cook for 15-20 minutes. Muffins will be done when mixture comes out the top of the hole. Enjoy!
